1 lb ground beef

1 lb ground pork

1 cup mashed potatoes (prepared or instant)

1 cup shredded cheddar cheese

1/2 cup crispy bacon, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

2 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1/2 tsp dried thyme

1/4 cup green onions, chopped (for garnish)

1/2 cup barbecue sauce (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the ground beef and ground pork.

      Add the prepared mashed potatoes, shredded cheddar cheese, crispy bacon, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, pepper, paprika, and thyme. Mix until everything is thoroughly combined but do not overmix.

        Shape the meat mixture into a loaf and place it on the prepared baking sheet.

          Brush the top and sides of the meatloaf with barbecue sauce.

            Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

              Once done, let it rest for 10 minutes before slicing.

                Garnish the meatloaf with chopped green onions before serving. Serve with extra barbecue sauce on the side for dipping.
