Tuscan Chicken Pasta Recipe

12 oz (340g) penne pasta

2 tablespoons olive oil

1 lb (450g) chicken breast, cut into bite-sized pieces

Salt and black pepper to taste

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup spinach leaves, fresh

½ cup grated Parmesan cheese

¼ cup fresh basil, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and black pepper. Add the chicken to the skillet and sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Flavor the Base: In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes, cooking for an additional 2 minutes.

          Create the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, allowing it to thicken slightly, about 5 minutes.

            Combine Ingredients: Add the cooked chicken back to the skillet, followed by the fresh spinach. Stir until the spinach wilts, about 1-2 minutes. Then, add the cooked pasta to the skillet, tossing everything together thoroughly.

              Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese until melted and well combined. Adjust the seasoning with more salt and pepper if needed.
