Ingredients
  

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk (or milk alternative)

2 tablespoons vegetable oil (plus more for cooking)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (optional)

Whipped cream and chocolate syrup for serving (optional)

Instructions
 

In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Stir until well mixed.

      Pour the wet ingredients into the dry ingredients, and gently fold until just combined. Be careful not to overmix; it’s okay if there are a few lumps. If desired, fold in the chocolate chips for an extra chocolatey pancake.

        Heat a non-stick skillet or griddle over medium heat and add a little vegetable oil to coat the surface.
