1 lb (450g) boneless, skinless chicken thighs

1 medium onion, sliced

3 cloves garlic, minced

2 medium tomatoes, diced

2-3 chipotle peppers in adobo sauce (adjust to taste)

1 tsp dried oregano

1 tsp ground cumin

2 tbsp olive oil

1 cup chicken broth

Salt and pepper, to taste

Corn tortillas

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping)

Lime wedges (for serving)

Cook the Chicken: In a large pot, heat 1 tablespoon of olive oil over medium heat. Season the chicken thighs with salt and pepper. Add the chicken to the pot and sear on both sides until browned, about 4-5 minutes per side.

    Sauté Vegetables: Remove the chicken from the pot and set aside. In the same pot, add another tablespoon of olive oil, then add the sliced onion. Sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Prepare the Sauce: Add the diced tomatoes, chipotle peppers, oregano, cumin, and chicken broth to the pot. Stir well and bring to a simmer.

        Simmer the Chicken: Return the chicken thighs to the pot, making sure they are submerged in the sauce. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the chicken is tender and fully cooked.

          Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot, stirring it into the sauce. Let it simmer for an additional 5-10 minutes to absorb the flavors, adjusting the seasoning with salt and pepper as needed.
