Tex-Mex Chopped Chicken Salad

Ingredients
  

2 cups cooked chicken breast, chopped (grilled or rotisserie)

1 cup cherry tomatoes, halved

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 avocado, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup romaine lettuce, chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1/2 cup Southwest or Chipotle dressing (store-bought or homemade)

Instructions
 

In a large mixing bowl, combine the chopped chicken, cherry tomatoes, black beans, corn, avocado, red bell pepper, red onion, and romaine lettuce.

    Sprinkle the shredded cheese and chopped cilantro over the top of the salad mixture.

      In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and pepper. Pour this spice mixture over the salad.

        Add the Southwest or Chipotle dressing, then gently toss everything together until well combined.

          Taste the salad and adjust seasoning if needed. Serve immediately for maximum freshness and enjoyment.
