Ingredients
  

1 lb chicken thighs, boneless and skinless

1/4 cup soy sauce

2 tablespoons fish sauce

1/4 cup honey

1 tablespoon brown sugar

2 tablespoons sriracha (adjust to taste)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup pineapple chunks (fresh or canned)

1 tablespoon lime juice

1 tablespoon vegetable oil

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, fish sauce, honey, brown sugar, sriracha, minced garlic, and grated ginger. Add the chicken thighs, ensuring they are well coated. Cover and marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken pieces and cook for about 5-7 minutes until they are golden brown on the outside and cooked through. Remove the chicken from the pan and set aside.

      Sauté Vegetables and Pineapple: In the same skillet, add the sliced red bell pepper and pineapple chunks. Sauté for about 3-4 minutes until the vegetables are tender yet crisp.

        Combine and Glaze: Return the cooked chicken to the skillet, drizzle with lime juice, and stir everything together. Cook for an additional 2 minutes, allowing the flavors to meld.
