Summer Corn and Zucchini Chowder

4 cups fresh corn kernels (cut from about 6 ears of corn)

2 medium zucchinis, diced

1 large onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh basil for garnish

Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the garlic and smoked paprika, cooking for another minute until fragrant.

    Add Vegetables: Add the diced zucchini and sauté for another 3-4 minutes. Then stir in the corn kernels and cook for about 5 minutes until they just begin to soften.

      Pour in Broth: Add the vegetable broth and thyme to the pot. Bring the mixture to a boil, then reduce to a simmer. Let it cook for 15-20 minutes, allowing the flavors to meld.

        Blend the Chowder: Using an immersion blender, blend the chowder until smooth, leaving some chunks for texture. Alternatively, transfer half of the chowder to a blender, blend until smooth, and return it to the pot.

          Stir in Cream: Pour in the heavy cream and stir until combined. Season with salt and pepper to taste. Allow to simmer for an additional 5 minutes to heat through.

            Serve: Ladle the chowder into bowls, garnish with fresh basil, and serve hot. Enjoy this refreshing summer dish!
