Sumac Onions

Made with thinly sliced red onions marinated in a delightful mix of sumac, olive oil, and fresh lemon juice, this recipe is a vibrant addition to any dish. Ingredients
  

2 medium red onions, thinly sliced

3 tablespoons sumac

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Pinch of chili flakes for heat

Instructions
 

In a large bowl, combine the thinly sliced red onions and sprinkle them with salt. Let them sit for about 10 minutes to draw out some moisture and soften the onions.

    In a separate small bowl, mix the sumac, olive oil, lemon juice, black pepper, and, if you’d like, the chili flakes. Whisk together until well combined.

      After the onions have softened, rinse them under cold water to remove excess salt. Drain well and pat dry with a paper towel.

        Pour the sumac mixture over the rinsed onions and toss until all the onions are evenly coated.

          Allow the onions to marinate in the refrigerator for at least 30 minutes to develop the flavors better. They can also sit for a few hours or overnight if you have time.

            Just before serving, give the onions a good stir and garnish with chopped fresh parsley.
