Ingredients

For the fruit filling:

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, pitted and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the crisp topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cubed

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently until the fruit is evenly coated. Pour the mixture into a greased 9x9-inch baking dish.

Make the Crisp Topping: In a separate bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt. Add the cubed cold butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture looks crumbly.

Assemble the Crisp: Evenly distribute the crisp topping over the fruit filling in the baking dish. Ensure it covers the fruit completely.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

Cool and Serve: Once baked, remove the crisp from the oven and let it cool for about 10 minutes before serving. This dish is delightful on its own or served warm with a scoop of vanilla ice cream or a dollop of whipped cream on top.
