1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice, rinsed

2 cups chicken broth

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon vegetable oil

1/2 teaspoon sesame oil

1 cup broccoli florets

1 cup shredded carrots

1/4 cup sliced green onions

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Cook the Rice: In a medium saucepan, combine the rinsed jasmine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.

    Prepare the Chicken Marinade: In a mixing bowl, combine soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, and grated ginger. Stir until well blended. Add the chicken pieces to the marinade, coating them thoroughly. Allow them to marinate for at least 15 minutes (or up to 1 hour for deeper flavor).

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes, turning occasionally, until the chicken is browned and cooked through.
