Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, washed and roughly chopped

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Optional: sour cream and salsa for serving

Instructions
 

Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.

    Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with dried oregano, salt, and pepper. Remove the skillet from heat and let the mixture cool slightly.

      Prepare the Quesadilla Filling: In a bowl, combine the sautéed spinach mixture with crumbled feta and shredded mozzarella. Mix well to combine.

        Assemble Quesadillas: Wipe out the skillet and return it to medium heat. Place one tortilla in the skillet. Spread a generous portion of the spinach and cheese mixture evenly over half of the tortilla. Fold the tortilla in half to cover the filling.

          Cook Quesadilla: Drizzle a little olive oil on the skillet (about 1/2 tablespoon) and cook the quesadilla for about 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with remaining tortillas and filling.

            Serve: Cut each quesadilla into wedges and serve hot with sour cream and salsa if desired.
