4 boneless, skinless chicken thighs

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice level)

1 can (400 ml) coconut milk

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. When hot, add the chicken thighs and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and sliced bell peppers, continuing to cook for another 5 minutes until the peppers soften.

        Spice It Up: Stir in the ground cumin, smoked paprika, and cayenne pepper, cooking for about a minute until fragrant.

          Combine with Coconut Milk: Pour the coconut milk into the skillet, stirring well to combine. Add the lime juice, then return the browned chicken thighs to the pan.

            Simmer: Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 20-25 minutes or until the chicken is tender and cooked through.
