2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup milk (or plant-based milk)

1 large egg

1 teaspoon vanilla extract

1/4 cup chocolate chips (optional)

Vegetable oil for frying

Powdered sugar for dusting

Instructions
 

In a mixing bowl, combine the mashed bananas, flour, sugar, baking powder, salt, and cinnamon. Stir until well combined.

    In another bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined. If using, gently fold in the chocolate chips.

      Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Ensure the oil is hot enough by dropping a small spoonful of batter into the skillet; it should sizzle.

        Using a spoon or an ice cream scoop, drop spoonfuls of the batter into the skillet, spacing them about an inch apart.

          Cook each fritter for about 2-3 minutes until golden brown, then flip and cook for an additional 2-3 minutes on the other side. Adjust the heat as necessary to avoid burning.

            Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.

              Dust with powdered sugar before serving. Optional: Serve with maple syrup or your favorite fruit compote.
