Sheet Pan Chicken, Chipotle & Pineapple Tacos

Featuring tender marinated chicken thighs paired with sweet pineapple, bell peppers, and onions, this dish is packed with flavor. Just bake it in the oven, slice, and serve on warm corn tortillas with fresh cilantro and a squeeze of lime. Perfect for a quick weeknight dinner or a fun gathering, these tacos are sure to impress!

Ingredients
  

1.5 lbs boneless, skinless chicken thighs

1 ½ cups fresh pineapple, diced

1 red bell pepper, sliced

1 yellow onion, sliced

3 tablespoons olive oil

2 tablespoons chipotle sauce (or more for heat)

1 tablespoon honey

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Corn tortillas, for serving

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a large mixing bowl, combine the olive oil, chipotle sauce, honey, cumin, smoked paprika, garlic powder, salt, and pepper. Stir well to create a marinade.

      Marinate the Chicken: Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 20 minutes for the best flavor.

        Prepare the Sheet Pan: Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. Spread the diced pineapple, sliced bell pepper, and onion evenly on one half of the sheet pan.

          Add Chicken to the Pan: Nestle the marinated chicken thighs on the other half of the sheet pan, making sure they are not overlapping.

            Bake: Place the sheet pan in the preheated oven and bake for about 25-30 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F) and the vegetables are tender and slightly caramelized.

              Remove and Rest: Once done, remove the pan from the oven and let the chicken rest for 5 minutes before slicing.

                Assemble Tacos: Slice the chicken into strips and serve them laid over warm corn tortillas. Top with roasted pineapple, bell pepper, onion, and garnish with fresh cilantro and lime juice.
