Sausage Tortellini Soup

Ingredients
  

1 lb (450g) Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks of celery, diced

6 cups (1.4L) chicken broth

1 can (14.5 oz) diced tomatoes (with juice)

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

9 oz (250g) cheese tortellini (fresh or frozen)

2 cups (60g) fresh spinach (or kale)

1 cup (100g) heavy cream (optional for creamier soup)

Grated Parmesan cheese, for serving

Fresh parsley or basil, chopped (for garnish)

Instructions
 

Brown the Sausage: In a large pot over medium heat, add the Italian sausage. Use a wooden spoon to break it apart and cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, carrots, and celery to the pot. Sauté for 4-5 minutes until the onion is translucent. Add the minced garlic and sauté for another 30 seconds until fragrant.

      Add Liquids and Seasonings: Pour in the chicken broth and canned diced tomatoes (including juice). Stir in the dried oregano, dried basil, salt, and pepper. Bring the mixture to a simmer.

        Cook the Tortellini: Add the tortellini to the pot and cook according to package instructions, usually around 5-7 minutes, until they float to the top and are tender.

          Add Greens and Cream: Once the tortellini is cooked, stir in the fresh spinach (or kale) and heavy cream (if using). Cook for another 2-3 minutes until the greens are wilted and the soup is warmed through.

            Taste and Adjust: Taste the soup and adjust seasonings with more salt, pepper, or herbs as desired.

              Serve: Ladle the soup into bowls, sprinkle with grated Parmesan cheese, and garnish with fresh parsley or basil.
