1 cup sushi rice

1 ¼ cups water

1 tablespoon rice vinegar

1 teaspoon sugar

½ teaspoon salt

1 pound fresh salmon, skinless

2 tablespoons soy sauce

1 teaspoon sesame oil

1 avocado, sliced

1 tablespoon wasabi mayonnaise (store-bought or homemade)

Nori sheets, cut into strips (for garnish)

Optional toppings: scallions, sesame seeds, microgreens

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to package instructions. Once cooked, let it sit for 10 minutes before transferring to a bowl.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Allow it to cool to room temperature.

      Cook the Salmon: Preheat your oven to 425°F (220°C). Season the salmon with soy sauce and sesame oil. Place it on a baking sheet lined with parchment paper and roast for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork. Allow it to cool slightly before flaking it into bite-sized pieces.

        Form Rice Bites: With damp hands, take a small ball of sushi rice (about 2 tablespoons), press it firmly to form a compact rectangle or oval shape. Repeat until all rice is shaped.
