500g boneless chicken (cut into bite-sized pieces)

1 cup plain yogurt

2 tbsp garam masala

1 tbsp cumin powder

1 tsp turmeric powder

Salt to taste

4 tbsp butter

1 medium onion (finely chopped)

3 garlic cloves (minced)

1-inch piece ginger (grated)

1 cup tomato puree

1 cup heavy cream

1 tsp red chili powder (adjust to taste)

Fresh cilantro (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with yogurt, garam masala, cumin powder, turmeric powder, and salt. Mix well and let it marinate for at least 30 minutes (or up to overnight in the refrigerator).

    Sauté Aromatics: In a large pan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until golden brown. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

      Cook Chicken: Add the marinated chicken to the pan, and cook until it's browned on all sides, about 5-7 minutes.

        Add Tomato and Cream: Pour in the tomato puree, and stir well. Reduce the heat to low and let it simmer for about 10 minutes. Then, add the heavy cream and remaining butter, stirring until fully incorporated.

          Season and Simmer: Add red chili powder, and adjust salt to taste. Let it simmer for another 5 minutes, allowing the flavors to meld together.

            Garnish and Serve: Remove from heat and garnish with fresh cilantro. Serve hot with naan bread or steamed rice.
