1 lb (450g) shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

2 tablespoons lime juice

1 tablespoon lime zest

2 teaspoons chili powder

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup cabbage, finely shredded

½ cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp, coconut milk, lime juice, lime zest, chili powder, garlic powder, ginger powder, salt, and pepper. Stir well to coat the shrimp evenly. Allow to marinate for at least 15 minutes.

    Cook the Shrimp: Heat a large skillet over medium heat. Add the marinated shrimp along with the marinade. Cook for about 5-7 minutes, or until the shrimp turns pink and opaque, stirring occasionally. Remove from heat.

      Prepare the Tortillas: While the shrimp is cooking, warm the tortillas in another skillet over low heat for about 30 seconds on each side until soft and pliable.

        Assemble the Tacos: Place a generous portion of shrimp onto each tortilla. Top with shredded cabbage, fresh cilantro, and avocado slices.

          Serve: Squeeze lime juice over the top and serve with lime wedges on the side.
