One Skillet Salmon with Lemon Orzo

4 salmon fillets (approximately 6 oz each)

1 cup orzo pasta

4 cups vegetable or chicken broth

1 medium onion, finely chopped

3 garlic cloves, minced

1 lemon (zest and juice)

1 cup cherry tomatoes, halved

2 cups fresh spinach

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Rinse the salmon fillets under cold water and pat dry with paper towels. Season both sides with salt, pepper, and dried oregano.

    Cook the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add Broth and Orzo: Pour in the vegetable or chicken broth and bring to a simmer. Add the orzo pasta, mixing well. Cook for about 8-10 minutes until the orzo is al dente, stirring occasionally to prevent sticking.

        Sear the Salmon: While the orzo cooks, in a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the seasoned salmon fillets, skin-side down. Sear for about 4-5 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

          Combine Ingredients: Once the orzo is cooked and most of the liquid is absorbed, stir in the lemon zest, lemon juice, cherry tomatoes, and fresh spinach. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften slightly.

            Serve: Gently place the cooked salmon fillets on top of the lemon orzo mixture in the skillet. Sprinkle with fresh parsley and additional lemon zest if desired. Serve warm with a wedge of lemon on the side.
