12 oz fettuccine or your favorite pasta

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated Gruyère cheese (plus extra for garnish)

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried thyme or 2 teaspoons fresh thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot over medium heat, add the olive oil. Once hot, add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring frequently, until the onions are caramelized and golden brown.

    Add Garlic and Flavorings: Stir in the minced garlic, dried thyme, and balsamic vinegar, cooking for an additional minute until fragrant.

      Combine Ingredients: Add the fettuccine to the pot along with the vegetable broth and heavy cream. Stir to combine everything and ensure the pasta is submerged in the liquid.

        Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and has absorbed most of the liquid. If the pasta looks too dry, you can add a little more broth or water to loosen it.
