2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Heat Oil: In a large skillet, heat the olive oil over medium heat.

    Cook Chicken: Add the diced chicken to the skillet and season with salt, pepper, paprika, and half of the Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.

        Add Remaining Vegetables: Stir in the bell pepper, zucchini, cherry tomatoes, and broccoli. Sprinkle with the remaining Italian seasoning. Cook for another 5-7 minutes until the vegetables are tender but still crisp.

          Combine and Finish: Taste and adjust the seasoning if necessary. If desired, drizzle with a bit more olive oil for added richness. Remove from heat.

            Garnish and Serve: Top with chopped fresh parsley and serve with lemon wedges on the side for squeezing over the dish.
