One-Pan Honey BBQ Chicken Rice

1.5 lbs (680g) boneless chicken thighs, cut into chunks

1 cup long-grain rice (such as basmati or jasmine)

2 cups chicken broth (or water)

1/2 cup barbecue sauce

1/4 cup honey

1 tablespoon soy sauce

1 tablespoon olive oil

1 cup bell peppers, diced (any color)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken chunks with barbecue sauce, honey, soy sauce, smoked paprika, onion powder, salt, and pepper. Let it marinate for at least 15 minutes (or up to 2 hours in the fridge for extra flavor).

    Sauté Vegetables: In a large skillet or a deep pan, heat olive oil over medium heat. Add the diced onion and bell peppers, sautéing until softened, about 4-5 minutes. Stir in the minced garlic and continue cooking for another minute until fragrant.

      Cook the Chicken: Add the marinated chicken (along with any leftover marinade) to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned on the outside (it doesn't need to be fully cooked through at this stage).

        Add Rice and Broth: Pour in the rice, and stir well for a minute to slightly toast the grains. Then, add the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is fully cooked and has absorbed the liquid.

          Fluff and Serve: After cooking, remove the skillet from heat. Let it sit, covered, for 5 minutes. Fluff the rice with a fork, and garnish with chopped parsley before serving.
