No Bake Pineapple Cream Dessert

1 can (20 oz) crushed pineapple in juice, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream or whipped topping

1 cup graham cracker crumbs

1/2 cup unsweetened coconut flakes (toasted, optional)

Fresh pineapple slices and mint leaves for garnish (optional)

Instructions
 

In a medium mixing bowl, beat the softened cream cheese using a hand mixer until smooth and creamy.

    Gradually add the powdered sugar and vanilla extract, continuing to mix until well combined and fluffy.

      Gently fold in the drained crushed pineapple and 3/4 cup of the whipped cream, ensuring not to deflate the mixture.

        In a separate bowl, combine the graham cracker crumbs and toasted coconut flakes (if using). Press half of this mixture into the bottom of a 9x9-inch baking dish to form a crust.

          Spread the pineapple cream mixture evenly over the crust in the baking dish.

            Top the pineapple layer with the remaining graham cracker crumb mixture, pressing down slightly to create an even layer.

              Finally, use the remaining whipped cream to dollop over the top, spreading gently.

                Refrigerate for at least 4 hours, preferably overnight, to allow the dessert to set and flavors to meld.

                  Before serving, garnish with fresh pineapple slices and mint leaves, if desired. Cut into squares and enjoy!
