Ingredients

2 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup chicken broth

1/2 cup sun-dried tomatoes, chopped

1 cup fresh spinach

1 cup grated Parmesan cheese

12 oz pasta of your choice (penne or fettuccine works great)

Fresh basil, for garnish

Red pepper flakes, for optional heat

Instructions

Cook the Pasta: Begin by cooking the pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water for later.

Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

Make the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the Italian seasoning, then pour in the heavy cream and chicken broth. Stir to combine, bringing the mixture to a simmer.

Add Sun-Dried Tomatoes and Spinach: Incorporate the chopped sun-dried tomatoes and fresh spinach into the sauce. Allow the spinach to wilt and the sauce to thicken for about 3-4 minutes.

Combine Chicken and Pasta: Slice the cooked chicken into strips and return it to the skillet. Add the cooked pasta and grated Parmesan cheese, tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

Serve: Dish out the pasta onto plates. Garnish with fresh basil and a sprinkle of red pepper flakes if desired. Enjoy your delicious Marry Me Chicken Pasta!
