Low Carb Mushroom & Spinach Cauliflower Rice

Ingredients
  

1 medium head of cauliflower, riced (or 4 cups pre-riced cauliflower)

2 tablespoons olive oil

1 cup mushrooms, sliced (button or cremini)

3 cups fresh spinach, chopped

2 cloves garlic, minced

1 small onion, diced

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cauliflower Rice: If you're starting with a whole cauliflower, remove the leaves and stem, then chop it into florets. Using a food processor, pulse the florets until they reach a rice-like consistency. Set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until it starts to become translucent.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet with the onions. Sauté for another 4-5 minutes until the mushrooms are tender and golden.

        Add Garlic and Spinach: Stir in the minced garlic and cook for 30 seconds until fragrant. Then, add the chopped spinach, and cook for 2-3 minutes until wilted.

          Incorporate the Cauliflower Rice: Stir in the riced cauliflower, oregano, salt, and black pepper. Mix well and cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender and heated through.

            Optional Cheese Finish: If using, sprinkle the grated Parmesan cheese over the cauliflower rice and stir until melted and well combined.
