8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 cups fresh spinach

4 cloves garlic, minced

1/4 cup olive oil

Zest and juice of 1 lemon

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the Shrimp: Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

        Prepare the Sauce: In the same skillet, add the lemon zest and juice, stirring to combine. Add the fresh spinach and cook until wilted, about 2 minutes.

          Combine Ingredients: Return the cooked shrimp to the skillet, then add the drained pasta. Pour in the reserved pasta water gradually until the sauce reaches your desired consistency. Toss everything together to combine.
