8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/4 cup black olives, sliced

2 cups fresh basil leaves, chopped

1/3 cup extra virgin olive oil

Zest and juice of 2 large lemons

2 tablespoons Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, Dijon mustard, salt, and pepper until emulsified.

      Mix the Salad: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, and chopped basil.

        Dress the Salad: Pour the dressing over the pasta salad and gently toss until everything is well coated.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
