1 lb ground beef (preferably 80/20 for richer flavor)

3 cloves garlic, minced

1-inch piece ginger, grated

¼ cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste, adjust heat to taste)

1 teaspoon rice vinegar

2 green onions, finely chopped (plus more for garnish)

1 cup shredded carrots

1 cup cooked white rice or cauliflower rice

1 tablespoon sesame seeds (for garnish)

Optional toppings: fried egg, pickled vegetables, cucumbers

Instructions
 

Prepare the Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat if needed.

    Sauté Aromatics: Add the minced garlic and grated ginger to the skillet. Sauté for 1-2 minutes until fragrant.

      Create the Flavor Base: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, gochujang, and rice vinegar. Pour this sauce over the beef mixture. Stir well to combine.

        Add Vegetables: Add the shredded carrots and half of the chopped green onions to the skillet. Mix everything well and let it simmer for 3-5 minutes, allowing the flavors to meld and the carrots to soften slightly.
