For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1 cup panko breadcrumbs

1/4 cup green onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 egg, beaten

Salt and pepper, to taste

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang (Korean chili paste)

1 teaspoon soy sauce

1 teaspoon lemon juice

1/2 teaspoon garlic powder

1 teaspoon sesame seeds (for garnish)

Sliced green onions (for garnish)

Prepare the Meatballs: In a large mixing bowl, combine the ground meat, panko breadcrumbs, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, beaten egg, salt, and pepper. Mix until just combined; avoid overmixing for a tender meatball.

    Form the Meatballs: Using your hands, scoop out about 1-2 tablespoons of the mixture and shape them into balls. Place the meatballs on a lined baking sheet, ensuring they are spaced apart.

      Cook the Meatballs: Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until they're nicely browned and cooked through. Alternatively, for a smokier flavor, grill them over medium heat, turning occasionally until cooked through.

        Make the Spicy Mayo Dip: In a small bowl, whisk together the mayonnaise, gochujang, soy sauce, lemon juice, and garlic powder. Taste and adjust the seasoning as needed.
