Ingredients

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup cooked white rice

2 green onions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, minced

2 tbsp soy sauce

2 tbsp gochujang (Korean chili paste)

1 tbsp sesame oil

1 tbsp brown sugar

1/2 tsp black pepper

1 egg, beaten

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1-2 tbsp sriracha (adjust to taste)

1 tsp lime juice

1 tsp sesame oil

Pinch of salt

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef (or pork), cooked rice, green onions, garlic, ginger, soy sauce, gochujang, sesame oil, brown sugar, black pepper, and beaten egg. Mix until well blended.

Shape the Meatballs: Wet your hands to prevent sticking, and shape the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.

Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and nicely browned on the outside.

Prepare the Spicy Mayo Dip: While the meatballs are baking, combine mayonnaise, sriracha, lime juice, sesame oil, and a pinch of salt in a small bowl. Whisk until smooth and adjust seasoning to your liking.

Serve: Once the meatballs are cooked, remove them from the oven and let them cool slightly. Serve them hot with the spicy mayo dip on the side for dipping.
