8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp vegetable oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 bell pepper (red or yellow), sliced

1 small zucchini, sliced

1 cup coconut milk

1/2 cup heavy cream

2 tbsp jerk seasoning (adjust to taste)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Juice of 1 lime

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté Vegetables: In a large skillet or frying pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 2-3 minutes.

      Add Shrimp and Peppers: Increase the heat to medium-high and add the sliced bell pepper and shrimp. Cook for about 3-4 minutes or until the shrimp turn pink and opaque.

        Incorporate Zucchini: Add the sliced zucchini to the skillet and sauté for an additional 2-3 minutes until it just softens.

          Create the Creamy Sauce: Lower the heat to medium, then add the coconut milk, heavy cream, and jerk seasoning. Stir well to combine and bring to a gentle simmer, allowing the flavors to meld together for about 5 minutes. Season with salt and pepper to taste.

            Combine Pasta & Sauce: Add the cooked fettuccine to the skillet, tossing to coat the pasta evenly in the sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

              Finish with Freshness: Remove the skillet from heat and stir in the lime juice and chopped parsley.

                Serve: Spoon the creamy shrimp pasta onto plates, garnishing with additional parsley and grated Parmesan cheese if desired.
