Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

⅓ cup granulated sugar

⅓ cup brown sugar, packed

1 large egg

½ cup unsweetened applesauce

⅓ cup vegetable oil

1 teaspoon vanilla extract

1 ½ cups diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Sugars: In a separate medium bowl, mix the granulated sugar and brown sugar. Add the egg, applesauce, vegetable oil, and vanilla extract. Whisk until smooth and fully incorporated.

Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Gently fold using a spatula until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

Add Apples and Nuts: Fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about ¾ full to allow for rising. You can sprinkle a little cinnamon sugar on top of each muffin if desired.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Enjoy: Remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Enjoy these delightful muffins warm with a pat of butter or store them in an airtight container for a delicious treat throughout the week!
