2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon salt

2 large eggs

½ cup unsalted butter, melted and slightly cooled

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 teaspoon vanilla extract

2 cups Granny Smith apples, peeled, cored, and diced

½ cup pecans or walnuts, chopped (optional)

1 tablespoon brown sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Mix Wet Ingredients: In another bowl, beat the eggs, then add the melted butter, buttermilk, and vanilla extract. Mix until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Use a wooden spoon or spatula to fold together gently until just combined (avoid overmixing).

          Add Apples: Gently fold in the diced apples and nuts, if using, until evenly distributed throughout the batter.

            Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the tops with brown sugar for added sweetness and a crunchy texture.

              Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
