Ingredients
  

2 cups rolled oats

2 medium apples, peeled and diced

1/2 cup unsweetened applesauce

2 cups almond milk (or any milk of your choice)

1/4 cup maple syrup (adjust to taste)

1/4 cup chopped nuts (walnuts or pecans)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

Pinch of salt

Optional: 1/2 cup raisins or dried cranberries

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

    In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Mix well.

      In another bowl, whisk together the almond milk, applesauce, maple syrup, and vanilla extract.

        Pour the wet ingredients into the dry ingredients and stir to combine.

          Fold in the diced apples and chopped nuts. If you are using raisins or dried cranberries, add them at this stage.

            Transfer the mixture into the prepared baking dish, spreading it evenly.

              Bake in the preheated oven for 30-35 minutes or until the top is golden brown and firm to the touch.

                Allow to cool for a few minutes before slicing. Serve warm and enjoy with a drizzle of extra maple syrup or a dollop of yogurt if desired!
