2 cups apple cider

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

1 tsp vanilla extract

1/4 cup cinnamon sugar (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or oil.

    In a medium saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and let it simmer until it has reduced to about 1 cup (approximately 15-20 minutes). Set aside to cool slightly.

      In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

        In another mixing bowl, combine the granulated sugar, brown sugar, eggs, applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Mix until well combined.

          Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.

            Using a piping bag or a zip-top bag with the corner snipped off, fill the prepared donut pan about 2/3 full with the batter.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Remove the donuts from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                  While the donuts are still warm, roll them in the cinnamon sugar mixture until well coated.
