Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

½ cup mini chocolate chips

½ cup crushed graham crackers

1 cup marshmallows (mini or halved if large)

Additional chocolate chips for topping

Additional crushed graham crackers for topping

Maple syrup for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In another bowl, combine the milk, egg, and melted butter. Mix well until smooth.

      Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; small lumps are fine.

        Fold in the mini chocolate chips and crushed graham crackers until evenly distributed throughout the batter.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a bit of butter.

            Pour about ¼ cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then sprinkle a few marshmallows and extra chocolate chips on top.

              Flip the pancake and cook for another 1-2 minutes, until golden brown and the marshmallows are slightly toasted.

                Remove from the skillet and repeat with the remaining batter, greasing the skillet as needed.

                  Stack the pancakes on serving plates, topping each stack with additional crushed graham crackers, chocolate chips, and a drizzle of maple syrup. Optionally, toast a few extra marshmallows for garnish.
