Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/4 cup hot honey (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon soy sauce

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a mixing bowl, combine the hot honey, olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper. Whisk until well combined.

Marinate the Salmon: Add the salmon cubes to the bowl and gently toss to coat them in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (up to 1 hour for more flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Arrange Salmon on Baking Sheet: Spread the marinated salmon pieces in a single layer on the prepared baking sheet, making sure they are evenly spaced.

Bake the Salmon Bites: Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Be careful not to overcook.

Serve: Remove from the oven and transfer to a serving platter. Drizzle with any remaining hot honey from the baking sheet. Garnish with fresh parsley and serve with lemon wedges on the side.
