2 lbs chicken thighs (boneless and skinless)

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup pineapple juice

2 tablespoons rice vinegar

3 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 tablespoon sesame oil

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 green onions (sliced, for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, minced garlic, grated ginger, sesame oil, black pepper, and red pepper flakes. Add the chicken thighs, making sure they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare for Baking: Line a baking dish with aluminum foil for easy cleanup. Remove the chicken from the marinade (reserving the marinade) and place the pieces in the baking dish, skin-side up.

        Cook the Chicken: Pour the reserved marinade over the chicken thighs. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C). For a caramelized finish, switch to broil for the last 5 minutes of cooking.

          Garnish and Serve: Once done, remove from the oven and let it rest for a few minutes. Garnish with sliced green onions and sesame seeds before serving. Serve hot with steamed rice and your favorite vegetables.
