Ground Turkey Teriyaki Stir Fry

Ingredients
  

1 lb ground turkey

2 tablespoons vegetable oil (divided)

2 cups broccoli florets

1 bell pepper, sliced (any color)

1 cup snap peas

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/3 cup soy sauce (low sodium)

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, and cornstarch slurry. Set aside.

    Cook the Turkey: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Transfer the cooked turkey to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then add the broccoli, bell pepper, and snap peas. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.

        Combine Ingredients: Add the cooked ground turkey back into the skillet with the vegetables. Pour the prepared teriyaki sauce over everything and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens and the stir fry is heated through.

          Finish with Green Onions: Add the white parts of the chopped green onions and stir to combine well.

            Serve: Serve the stir fry over cooked jasmine or brown rice, and garnish with sesame seeds and the green parts of the green onions.
