1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, chopped

1 cup corn (fresh, frozen, or canned)

1 tsp smoked paprika

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1/4 cup chicken broth

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving (optional)

Prepare the Sweet Potatoes: Begin by peeling and dicing the sweet potatoes into small cubes for even cooking.

    Cook the Turkey: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey, breaking it apart with a spoon. Cook for about 5-7 minutes until browned. Season with salt, pepper, smoked paprika, and cumin. Once the turkey is cooked through, remove it from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper, cooking for about 3-4 minutes until they start to soften. Stir in the minced garlic and cook for another minute until fragrant.
