Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach (fresh or frozen)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are fork-tender and starting to brown. Remove from skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining olive oil. Add the chopped onion and red bell pepper. Sauté for 5 minutes until the onion is translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Ground Turkey: Push the onion and pepper mix to one side of the skillet. Add the ground turkey to the other side, breaking it apart with a spatula. Cook until the turkey is no longer pink, about 6-8 minutes.

        Season the Mixture: Once the turkey is cooked through, stir it into the onions and peppers. Add the smoked paprika, cumin, chili powder, and season with salt and pepper to taste.

          Combine with Sweet Potatoes: Return the cooked sweet potatoes to the skillet. Stir everything together until well combined. Cook for another 2-3 minutes to meld the flavors.

            Add the Spinach: Fold in the spinach and cook until wilted (if using fresh) or heated through (if using frozen), about 2 minutes.

              Serve: Remove from heat and garnish with fresh cilantro. Serve with lime wedges on the side for a zesty touch.
