Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 large sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup diced bell pepper (any color)

1 cup frozen corn

1 cup black beans, rinsed and drained

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

½ tsp salt

½ tsp black pepper

2 cups shredded cheddar cheese

1 cup chicken broth

¼ cup chopped fresh cilantro (optional, for garnish)

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.

    Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook, stirring frequently, until browned and fully cooked. Use a spatula to break up any large pieces.

      Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the turkey. Sauté for about 3-4 minutes, until the onion is translucent. Then, add the diced bell pepper and cook for another 2-3 minutes.

        Combine Ingredients: Stir in the corn, black beans, cumin, smoked paprika, chili powder, salt, and black pepper. Pour in the chicken broth and bring the mixture to a gentle simmer for about 5 minutes.

          Layer Sweet Potatoes: In the prepared casserole dish, layer half of the diced sweet potatoes at the bottom. Pour half of the turkey and vegetable mixture over the sweet potatoes, then sprinkle with a layer of shredded cheddar cheese.

            Repeat Layers: Repeat the layering process with the remaining sweet potatoes, turkey mixture, and top with the rest of the shredded cheese.

              Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the sweet potatoes are tender and the cheese is bubbly and golden brown.
