1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup fresh corn kernels (or canned, drained)

1 medium red bell pepper, diced

1 small red onion, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 cloves garlic, minced

Juice of 1/2 lime

Salt and pepper to taste

For Assembly:

2 cups cooked rice (white, brown, or cauliflower rice)

1 ripe avocado, sliced

Lime wedges for garnish

Extra cilantro for garnish

Marinate the Shrimp: In a large bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, lime juice, salt, and pepper. Toss to coat well and let it marinate for at least 15 minutes.

    Prepare the Corn Salsa: In a separate bowl, mix together the corn, red bell pepper, red onion, cilantro, lime juice, salt, and pepper. Adjust seasoning to taste and set aside.
