Juice of 1 lime

For the Corn Salsa:

1 cup corn kernels (fresh, frozen or canned)

1 red bell pepper, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

For the Creamy Garlic Sauce:

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

Fresh cilantro for garnish

Instructions

Marinate the Shrimp:

    - In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, pepper, and lime juice. Add the shrimp and toss to coat. Cover and let marinate for at least 15 minutes while you prepare the other components.

      Prepare the Corn Salsa:

        - In a separate bowl, mix together the corn, diced red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Set aside for the flavors to meld.

          Make the Creamy Garlic Sauce:

            - In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste and refrigerate until ready to use.

              Grill the Shrimp:

                - Preheat your grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the shrimp for about 2-3 minutes on each side or until they are pink and opaque. Remove from the grill.

                  Assemble the Bowls:

                    - In serving bowls, start with a base of cooked quinoa or rice. Top with grilled shrimp, a generous scoop of corn salsa, and sliced avocado. Drizzle the creamy garlic sauce over the top and garnish with fresh cilantro and lime wedges.

                      Serve:

                        - Enjoy your Grilled Shrimp Bowls with Avocado, Corn Salsa, and Creamy Garlic Sauce immediately!
