Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 clove garlic, minced

1/2 teaspoon ground cumin

Salt and pepper, to taste

1/4 cup water (adjust for consistency)

1/2 cup diced cucumber

1/2 cup diced tomatoes

1/3 cup Kalamata olives, pitted and chopped

1/4 cup red onion, finely chopped

1/2 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

Pita bread or vegetable sticks, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper. Blend until smooth.

    While the processor is running, gradually add water until the hummus reaches your desired consistency. Adjust seasoning if needed.

      Transfer the hummus to a serving dish, spreading it out into a well in the center.

        In a bowl, mix together the diced cucumber, tomatoes, Kalamata olives, red onion, and parsley. Drizzle a little olive oil and sprinkle with salt for added flavor.

          Spoon the vegetable mixture into the well in the hummus, allowing some to spill over the edges.

            Sprinkle crumbled feta cheese generously on top of the loaded hummus.
