Ingredients

8 oz spaghetti or fettuccine

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup reserved pasta water

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta and set it aside.

Sauté Garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 2 minutes until the garlic is fragrant and lightly golden.

Create the Sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir occasionally and let it simmer for about 3–4 minutes to slightly thicken.

Add Cheese: Reduce heat to low and gradually whisk in the freshly grated Parmesan cheese, stirring until the cheese melts and the sauce is smooth. If the sauce is too thick, add some of the reserved pasta water a little at a time until you reach your desired consistency.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the garlic Parmesan sauce until well coated. Season with salt and black pepper to taste.

Serve: Plate the pasta and garnish with chopped fresh parsley. Add extra Parmesan cheese on top if desired.
