Garlic Butter Steak Bites and Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons butter

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the halved baby potatoes with olive oil, paprika, thyme, salt, and pepper until well-coated. Spread them in a single layer on a baking sheet lined with parchment paper.

    Roast the Potatoes: Roast the potatoes in the preheated oven for about 25-30 minutes, or until golden brown and fork-tender, flipping halfway through.

      Cook the Steak Bites: While the potatoes are roasting, season the steak cubes with salt and pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak bites in a single layer, cooking for about 2-3 minutes without stirring to allow a nice sear.

        Infuse with Garlic Butter: Once seared, flip the steak bites to cook on the other side. Add the minced garlic and butter to the skillet. Cook for another 2-3 minutes, stirring occasionally, until the steak is cooked to your preferred doneness (medium-rare is about 130°F or 54°C).

          Combine and Serve: Once the potatoes are done roasting, remove them from the oven and combine them gently with the garlic butter steak bites in the skillet. Drizzle any remaining garlic butter over the dish.
