For the Steak Bites:

1 pound sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves of garlic, minced

1 tablespoon fresh parsley, chopped

Salt and black pepper to taste

1 tablespoon olive oil

For the Potatoes:

1 pound baby potatoes, halved or quartered

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, toss the halved or quartered baby potatoes with 2 tablespoons of olive oil, paprika, garlic powder, salt, and pepper until well-coated.

        - Spread the seasoned potatoes on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, or until golden brown and fork-tender, flipping halfway through cooking.

          Cook the Steak Bites:

            - While the potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

              - Season the steak pieces with salt and pepper.

                - Once the skillet is hot, add the steak bites in a single layer (you may need to do this in batches). Cook for 2-3 minutes until they develop a nice crust, then flip and cook for another 2-3 minutes for medium-rare. Adjust the cooking time according to your preferred doneness.

                  - Remove the steak bites from the skillet and set aside on a plate.

                    Make the Garlic Butter:

                      - In the same skillet, lower the heat to medium and add the butter.

                        - Once melted, add the minced garlic and sauté for about 30 seconds, until fragrant but not burnt.
