1 lb sirloin steak, cut into 1-inch pieces

1 lb baby Yukon Gold potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Fresh parsley, chopped, for garnish

Prep the Potatoes: Start by placing the halved Yukon Gold potatoes in a pot of salted water. Bring to a boil and cook for about 10 minutes, or until just tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak pieces in a single layer, season with salt and pepper. Sear the steak for about 3-4 minutes until browned, flipping halfway through. Remove from the skillet and set aside.

      Sauté Garlic and Herbs: In the same skillet, lower the heat to medium, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic, rosemary, and thyme, stirring continuously for about 1 minute until fragrant.

        Combine Potatoes: Add the prepared potatoes to the skillet and toss to coat in the garlic butter mixture. Cook for 4-5 minutes, allowing them to get crispy and golden brown.

          Finish with Steak: Return the cooked steak to the skillet and pour in the Worcestershire sauce. Add remaining butter and toss everything together, cooking for another 2-3 minutes until heated through.
