Garlic Butter chicken Bites

1 lb (450g) chicken breast, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Juice of half a lemon

Zest of one lemon

Optional: Fresh lemon wedges for serving

Instructions
 

In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add the chicken pieces and season with salt, pepper, and paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

    In the same skillet, lower the heat to medium-low and add the remaining 2 tablespoons of butter. Once the butter is melted, add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant (be careful not to burn it).

      Add the cooked chicken back to the skillet along with the dried oregano, lemon juice, and lemon zest. Stir everything together to ensure the chicken is well coated with the garlic butter mixture.

        Cook for an additional 2-3 minutes, allowing the flavors to meld together. Taste and adjust seasoning if needed.

          Remove from heat, sprinkle with freshly chopped parsley, and give it a final stir.

            Serve warm with optional lemon wedges on the side for an extra zesty kick.
